Description
Position Summary:
Maintain a cost effective, comprehensive list of alcoholic beverages and cocktails to offer City Winery clientele. Practice proper product ordering within budget, routine and “on the spot” physical counts of inventory; complete monthly inventory analysis report; participate in thorough staff training on product, pouring levels and theft control. Work with other captains and the Service Director to handle special guest requests, allowing the service team to concentrate on basic order taking and up-selling. It is also important to display a high level of attention to detail while in service to ensure guest satisfaction.

Basic outline of job and duties:

- Inform bar staff of beverage changes in daily staff meeting.
- Conduct bi-weekly bar meetings to address product variances and new products.
- Keep current with beer and liquor margins through effective ordering and competitive industry pricing.
- Perform a monthly physical count on BinWise of all beverages, including wine. Spot-check items that are experiencing shrinkage.
- Send a complete beverage inventory to the GM by the 10tth of each proceeding month along with a detailed summary of the report.
- Work with events team and Concert Manager on beverage pars for private events & concerts.
- Communicate low or 86’d products to floor staff.
- Help GM, Service Director and captains create staff selling competitions.
- Conduct regular beverage training for bar staff including pouring pars, bar side-work and general bar maintenance.
