LINE COOK POSITION OVERVIEW:

The h.wood Group’s Mason is seeking a hardworking and dedicated worker for our new Classic American Chophouse in Santa Monica Sous Chefs for the Hwood group are able to work in various restaurants with different cuisines and service styles. Our venues range from Hotels, Fine Dining, Dinner only restaurants, to Fast Casual Concepts.

Our menus are inspired by fresh, seasonal, farmer's market ingredients with daily specials and seasonally changing menus and an emphasis on quality service. The chef will have creative contribution in the form of specials and seasonal menu changes.

Summary of Duties:
1. Prepare food to order as specified by the Chef and guest.
2. Follow recipes accurately as outlined by the Chef.
3. Coordinate timing of dish completion with other cooks, as directed by the Chef.
4. Accommodate special requests and dietary restrictions as directed by the Chef.
5. Station set up and tear down.
6. Ensure all supplies needed for service ready for use.
7. Prior to service, prep dish elements such as stocks and garnishes. This may include chopping vegetables and butchery.
8. Perform duties in accordance with California Health and Safety Standards.
9. Sanitize work stations.
10. Mark and date all stored food.
11. Ensure dishes are prepared to accurate temperature.
12. Disposing of waste.
13. Daily organization of all kitchen areas.
14. Clean all surfaces on station.
15. Store or dispose of all unused items

Skills / Experience:
1. Previous experience in high volume kitchen or equivalent culinary education
2. Intermediate to advanced knife skills
3. Time management skills
4. Thorough understanding of safe food handling
